One of my early childhood memories is that of my mother and I living in my grandparents' home in early post-war San Francisco. My grandmother (Yiayiá) had a group of lady friends from the Greek church come over for a day of baking for the holidays. There was a lot of chatter and laughter, and back then I was fluent in Greek; I spoke very little English even though I was born in America because the only one who spoke English to me was my mom. Anyway, part of the preparations was making phyllo (filo) pastry. Yes! From scratch...can you believe it? The ladies would spread a clean sheet on my Yiayiá's bed, and using a broomstick or long dowel held on each side of the bed by a lady, they would begin to roll the dough...back and forth until it began to fill up the bed and become almost tissue thin. They would then cut the phyllo (filo) into sheets with a pair of scissors. I would stand in a corner fascinated by this whole process, which seemed magical from a child's perspective. This is one of my few memories of my Yiayiá and I cherish it.
